Circus Animal Cookie No-Bake Cheesecake Parfaits
It's Wednesday again! And you know what that means. I got something pink and delicious coming your way!
This week I made Circus Animal Cookie Cheesecake Parfaits, and man, oh man, are these good and so easy to make!
And look how adorable they are?! Who could resist that?
Oh, oh, and they stay good overnight in the fridge! Perfect for prepping in the morning or the night before for you need them. Just wait to put the sprinkles on them. I find the color on the rainbow sprinkles melts into the whipped cream and looks gross. BUT, the cookies don't go all stale and mushy, so that's a win!
Last note, do not look at the nutrition info for these. DO NOT. Somethings are better left unknown. And yolo, right?
476 grams (2 cups) whipping cream
452 grams (2 8 ounce packages) cream cheese, room temperature
50 grams (1/4 cup) granulated sugar
1 tsp clear vanilla extract
2 tbs milk
neon pink gel food coloring
45 grams (3 tbs) caster sugar
396 grams (1 14 ounce bag) Circus Animal Cookies, crushed (reserve 4 cookies for toppers)
rainbow nonpareils sprinkles
In the bowl of an electric mixer fitted with a whisk attachment, whisk whipping cream and caster sugar until stiff peaks. Place in a separate bowl.
In the bowl of an electric mixer fitted with a paddle attachment, beat together cream cheese, sugar, and vanilla until blended.
Divide in half. Add pink gel food coloring to one half until desired color is reached.
Fold in 1/3 of the whipped cream into each of the cream cheese mixtures.
Place each of the cream cheese mixtures and the remaining whipped cream into piping bags fitted with large piping tips. I used a large star tip for the whipped cream.
Layer white cream cheese mixer, crushed cookies, pink cream cheese mixture, and crushed cookies again into 4 serving glasses. Top with whipped cream, rainbow sprinkles and non-crushed animal cookie.
